Resurrection Cookies


This is a great tradition to start with your kids to teach them about the resurrection of Jesus


You Need
1- cup whole pecans
1-teaspoon vinegar
3 egg whites
pinch of salt
1-cup sugar
zipper baggie
wooden spoon
tape
Bible



Preheat the oven to 300 (this is important-don't wait 'til you're half-done with the recipe)


1. Place the pecans in the baggie and let the kids beat them with the wooden spoon to break them into pieces. Explain that after Jesus was arrested, He was beaten by the Roman soldiers.
Read John 19:1-3


2. Put the vinegar into a mixing bowl. Let each child smell the vinegar. Explain that when Jesus was on the cross and He became thirsty, He was offered vinegar to drink.
Read John 19:28-30


3. Add the egg whites to the vinegar. The eggs represent life. Explain that Jesus gave His life so that we could have life.
Read John 10:10-11


4. Sprinkle a little salt into each child's hand and let them taste it. Put the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin.
Read Luke 23:27


5. So far the ingredients are not very appetizing. Add 1 cup of sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him.
Read Psalm 34:8 and John 3:16


6. Beat the egg whites with a mixer on high speed for 12 to 15 minutes, until stiff peaks form. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus.
Read Isa. 1:18 and John 3:1-3


7. Fold in the broken nuts. Drop by teaspoons onto a wax paper cookie sheet. Explain that each mound represents the rocky tomb where Jesus body was laid to rest.
Read Matt. 27:57-60


8. Put the cookie sheet in the oven, close the door and turn the oven off.


9. Give each child a piece of tape and seal the door. Explain that Jesus tomb was sealed.
Read Matt. 27:65-66


10. Go to bed. Explain that they may feel sad to leave the cookies in the oven overnight and that Jesus followers were in despair when the tomb was sealed.
Read John 16:20-22


11. On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. the cookies are hollow! ON THE FIRST EASTER, Jesus' followers were amazed to find His tomb empty.

2 minute soup.


So I wasn't planning on making dinner tonight, some friends in our ward invited us over for dinner and to look at some pictures they had taken of little O. Well the plans fell through so I was stuck making dinner very last minute ( O had to eat and so did his dad). I try to plan out my menu for the week but it didn't happen this last week.

So here I am trying to find anything in my cupboard, when this happens I always go to soup or spaghetti . So here is my last last minute soup recipe.

Brittanys one pot Soup...

Can or container of chicken broth (I usually buy it from costco it comes 3 pack and is Organic)
Can of Black beans
Frozen corn (however much you want I just eyeball it)
cut up mushrooms (don't be totally grossed out I used a small can remember I have like no food in my cupboards)
Can of tomatoes (or rotel from the grocery store it has a few more spices)
Frozen Artichoke hearts (tj's sells it in a bag by the frozen veggies)
Can of chicken (drained and broken up)

For seasonings I add a half of envelope of taco seasoning and half or ranch dressing mix. I am not sure if they have these at trader joes. I always have them on hand the taco mix is pretty cheap and Joe loves the ranch mix.


Tonight we added sour cream and cheese, even O gobbled it down. So I am sorry that you might not be able to find all of these things at Trader Joes but you can definitely make it all organic. I will try and take a picture when I have it for lunch tomorrow.

I lost my poor meatball.. pie

100% TJ's ingredients make this dish YUMMY!! I had two 3 year olds eating this today and both were telling me how yummy it is. Exact words, "Mommy, thank you for making this yummy food for us!" Yes, it was a rare moment I will cherish always. But really, it is a yummy dish!

Weight Watcher's points: 12 for 1/8 serving
Time from start to finish: About 30min.
Difficulty: SUPER EASY!!

(sorry, no picture this time!)

Ingredients:
Frozen pie crust from trader Joe's (THE BEST PRE-MADE PIE CRUST!!)
Your favorite jar of pasta sause (doctored up however you like, I used fresh mushrooms. Fresh onions and bell peppers would be good too)
1-2 bags of Trader Joe's TURKEY meatballs, cut in half. (if possible, they are frozen so be careful!) (p.s.- These meatballs are SOOO good!)
1 packages of motzerella cheese ( for a lower calorie meal, use part skim mozzerella)

TO prepare:
Cook ONE pie crust per directions on package (or if in a time crunch, may use unbaked pie crust and bake it all at once). Add half of sauce, meatballs, then rest of sauce. Cover with cheese. I put chopped mushrooms on top of cheese, turned out nice...
Bake in 450 degree oven for about 13-14 minutes.
Serve with your favorite side salad!!
ENJOY!!

For a HIGHER calorie meal, bake in double pie crust per pie crust box directions.

I am telling you, you will have them jumping out of their seats in adoration of your amazing dinners!
